Zucchini Linguine with Marinara sauce

Zucchini Linguine with Marinara sauce is a meal that I really enjoy;
The zucchini is crunchy like real pasta and the sauce is divine!
Plus it's super easy and quick to prepare!;

Here are what you'll need:
- 1 medium or large zucchini
- 1 large tomato
- 1/2 red bell pepper
- 1/2 cup sun dried tomatoes (if they are dry, soak them about 1/2h to 1h; you can also use sun dried tomatoes that are conserve in olive oil).
- Garlic (1 clove or powder)
- basil, oregano (fresh is better but you can use flakes)
- salt
- 1tsp olive oil.

Prepare the zucchini by peeling it; discard the peel and continue with your peeler to get some linguine shapes.
If the center has to much seeds you can keep it to juice it or make a soup...

For the sauce (I make it in the nutri bullet), you can use any blender.
Add all the other ingredients and mix until smooth.
Pour on top of the zucchini, stir gently and you are ready for a succulent and light meal, easy to digest!...

Papaya Salad

Today I will share with you a papaya salad that I enjoy;
It's sweet and fresh and perfect for summer!
You might know a Thai version of it with green papaya and shrimps....
This is the way I make it and I like it.
I take my papaya a little bit ripe (I read that ripe fruits are best for you) and it's even sweeter like that.

Here is what you need:

- 1 semi ripe papaya
- 1 ripe tomato
- Few raw peanuts (if no allergies!)
- some fresh basil
- half a lime juice


First peel, de-seed and gently shred the papaya

(Looks like juicy bright carrots!)

Add  basil and diced tomato



Then crushed peanuts


and just add 1/2 lime juice for the sauce

Babaco Fruit

We are now living in Ecuador and we are discovering new fruits; Here is one that I tried today and simply made a juice with it.
It's called Babaco,
It seems to be the same family of the papaya; The fruit is yellow, long and have a pentagonal shape.


The skin is thin and easy to cut.
In the center there is kind of a flesh looking like marshmallow!

I removed it and cut the fruit in small pieces to juice it.
It's really juicy and looks like a ripe pear.

The taste (for us) is like a soft lemon.

Kitchen small appliances ...

Forget the coffee machine, toaster, micro-waves and such!....
Here are the small appliances you will need for a healthy living:

- A juicer is a must to have to get the most from your fruits and veggies; Juicing will extract all the nutriments, vitamins in a liquid form easy to digest for your body.
I started with a centrifugal juicer but it doesn't juice the greens very well; so we invested in a masticating juicer and we Love it!

         

it comes with few accessories


- A Powerful Blender to do smoothies, sauces, dip, soup and more.
We had a pretty good blender with various speed and we thought it was great but since we try the Vitamix, there is nothing to compare with! It's fantastic, we really Love it!
There is different Vitamix blender; We use the turboblend.

  

The one we bought came with a temper, a fabulous recipe binder and a milk bag...

- and Finally we invested in a juice press; Perfect for juicing citrus like oranges, grapefruit, mandarins  lemons, limes... (as well as pomegranate). 

   

These are the small appliances we use the most beside a good knife and a cutting board!...

Think to invest in your health by getting the right tools!

My Favorite morning Juice!

Today, I just wanted to share my favorite morning juice...
Light, sweet and full of magic for my cells! it gives me all I need to have enough energy for my morning activities...

Here are the ingredients:

- 2 apples
- 1/4 pineapple
- 1/4 lime
- 1 celery stalk
- 1/2 cucumber
- 2 kale branches 
(Or a handful of spinach)

Collard Wraps

Here is a fun wrap that you can do when you want something crunchy and yummy!

Collard greens are not always easy to find, you can replace them with a large lettuce leaf.


Gently de-stem the leaf

Make a raw pesto (I will add the recipe later on)
spread it on the middle of the leaf

 

Add any veggies you like

start with a bed of greens, young arugula, kale, lettuce...

add shredded carrots, tomatoes, red pepper, cucumber, avocado, onions...

wrap it up!

and enjoy!

Sweet treat!

I wanted to share a little sweet treat that can be perfect for Valentine day or any occasion!

Lime bites...



What you'll need:
3/4 cup Almond meal
2 Tbsp lime zest
2 Tbsp lime juice
pinch of Salt 
1/4 cup agave (or raw honey)
few spinach leaves
2 cups shredded coconut

---

For the chocolate:

1/4cp raw cacao powder
1/4 melted coconut oil
2 Tbs agave
salt (pinch)

Mix the 4th first ingredients in a food processor; add the agave, spinach and then the coconut (do not over process); pulse to get a nice texture.
Form some balls in your palm and dehydrate them up to 1 hour (at 105F)
While they are in the dehydrator, prepare your chocolate:
melt the coconut butter, add it to the cacao powder, add the agave and salt and stir well.
Then dip your lime bites in the chocolate
Place them in a dish that can be store in the freezer for few hours (1h to 1h30 must be good)

Flax Crackers

Flax crackers are great when you'd like a little crunchy in your meal!
There is few different recipes for them,
Here is how I do mine:

You'll need: 
3/4 cup flax seed (soaked)
2 to 3 cups carrot pulp (what you get when you make carrot juice!)
1/2 tomato or red pepper
garlic to taste
onion to taste (1/8 for us!)
Salt, pepper

Blend everything in the food processor

Here is what you get!

Pour on a te-flex sheet




and spread it to form a nice big square


Score with your spatula the shape you want to give them



I just make them to small rectangle

dehydrate for 4 hours (at 105F)
Then flip them over and take off the teflex sheet 
Dehydrate for another 2 hours

and here are some crunchy and tasty crackers


perfect for your salad, dips, sandwich and more...

Celebrating!

I’ve just completed Jason Vale’s 7lbs in 7days Juice Master Diet and I feel good!
Lost 2 pounds this week (that's enough for me now!)

and I am Celebrating this morning with my most favorite green smoothie!
(Not in the program!)


I already gave the recipe  last Christmas!



I am totally convinced that a plant (fruits and veggies) base diet is a key to good health
and I really love the recommendations from Jason Vale!

Kale chips

If you never had Kale chips, it's a thing to try!
These are so good!
Crispy and cheesy!

Look at them:


Don't they look delicious?!

(I was lucky to get them in picture because the plate didn't last very long!)

Ok, here how I do them:

Wash and cut your Kale in small pieces:


I have about 5 medium leaves here

Do a raw cheesy dip:
with

1 cup of soaked cashews
3 Tbps of raw tahini
3Tbsp of chick pea miso
3 Tbsp of lemon juice
2 Tbsp of nutritional yeast 
or more if you want it more cheesy!
garlic to taste
salt to taste
water if necessary (for the consistency)


put your cheesy dip on your kale


and stir very well
You might need to get your hands in it to cover each little spaces!


lay each piece on dehydrator sheet (or 2!)


and dehydrate for about 4 hours (on 105F)


after 3 hours I take of the Teflon sheet to finish to dry them.

and here we go:



Crispy, cheesy, irresistible!

Perfect salty snack!
